These scones are a dream for festive breakfasts (or even dessert)! Loaded with chunks of creamy white chocolate and juicy dried cranberries, they're perfectly sweet and are super easy to make using our grain-free Biscuit + Scone mix.
- 1 package Stellar Eats Biscuit + Scone Mix
- 3 tbsp oil or butter
- 1 egg (or sub flax egg for vegan version)
- 1 tbsp apple cider vinegar
- 1/4 cup coconut sugar
- 1/2 cup chopped white chocolate (or chips)
- 1/3 cup dried cranberries
Preheat your oven to 350 degrees.
Pour your Biscuit + Scone Mix into a large bowl and add the 1/4 cup of coconut sugar. Continue to prepare the mix according to the package directions using the oil or butter (tip: sub butter for a super rich scone!), egg, apple cider vinegar and water.
Add in your white chocolate and cranberries and gently mix until they are incorporated into your scone dough.
Shape the dough into 8-10 small rounds on a baking sheet, flattening them slightly.
Bake for 25 minutes, then remove from the oven and let cool.
Drizzle with extra white chocolate if desired and serve!
