Who says you can't get your greens and enjoy a slice (or three) of pizza at the same time?! This simple and nourishing green pizza uses our grain-free, paleo Pizza Dough mix as the base and gets topped with a thick layer of ricotta cheese (vegan or regular!), crispy, garlicky sautéed zucchini, salty green olives and a sprinkling of peppery arugula on top for good measure. Chili flakes are highly encouraged, too ;)
Ingredients
- 1 package Stellar Eats Pizza Dough Mix
- 4 tbsp avocado or olive oil, divided
- 2 tbsp apple cider vinegar
- 3/4 cup water
- 1 large zucchini, thinly sliced
- 2 cloves garlic, thinly sliced
- 2/3 cup ricotta cheese (vegan or regular)
- 1/4 cup green olives, thinly sliced
- Handful of arugula
- Sea salt and black pepper
- Chili flakes for topping
- 1/2 lemon for topping
Method
Preheat your oven to 400 degrees and line a baking sheet or pizza stone with parchment.
Place 2 tbsp of your oil in a large pan or skillet over medium heat. Add your zucchini slices, a big pinch of salt and pepper and cook for 4-5 minutes, or until one side is golden brown. Flip your zucchini pieces and add the sliced garlic. Cook everything for another 4-5 minutes until crispy and browned, then remove from heat and set aside.
Prepare your Stellar Eats Pizza Dough mix according to the package directions using the other 2 tbsp of your oil, 2 tbsp apple cider vinegar and 3/4 cup water. Let batter sit for 2 minutes to thicken up.
Oil your hands to prevent sticking, then shape your pizza dough into a large round about 1/2-inch thick on your prepared baking sheet, raising the edges slightly. Bake for 12 minutes.
Remove pizza dough from the oven and spread evenly with the ricotta cheese, leaving 1 inch around the edges as your crust. Add the cooked zucchini with garlic, then sprinkle with the sliced green olives.
Bake for an additional 12-14 minutes or until the bottom is golden brown and the pizza is cooked to your liking. Remove from the oven and sprinkle with your arugula, chili flakes and more salt and pepper. Add a squeeze of lemon on top if desired, then slice and enjoy!
