Paleo Chocolate Cake with Peanut Butter Cream Cheese Frosting

An impressive cake is a staple dessert for any celebration, but let's be real: it can be a pain to make from scratch. Luckily, we've got you covered with our Chocolate Cake + Cupcake mix, which can easily be prepared as per the package instructions and spread into a round or square pan for a perfect little cake. And this frosting?! It is TRULY phenomenal - made with our absolute favourite vegan butter and cream cheese from Culcherd, plus a generous scoop of peanut butter and a touch of sea salt for that salty-sweet goodness. 

Ingredients:

  • 1 package Stellar Eats Chocolate Cake + Cupcake Mix
  • 2 eggs (or vegan replacer)
  • 1/4 cup oil (we love avocado oil!)
  • 1/2 cup almond or coconut milk
  • 1 stick of softened vegan (or regular) butter
  • 1/4 cup vegan cream cheese
  • 1/4 cup peanut butter
  • 2 cups confectioner's (icing) sugar
  • 1-2 tbsp almond or coconut milk
  • 1/4 tsp vanilla extract
  • pinch of sea salt

Method:

Prepare the Stellar Eats Chocolate Cake + Cupcake Mix in a round or square cake pan, as per the package directions using the eggs, oil and milk.

While it bakes, prepare your frosting by beating together the softened butter and cream cheese with a handheld electric mixer until light and creamy. Add in your 1 cup of icing sugar plus 1 tbsp of milk and continue to beat on medium-low speed. Add the additional 1 cup of icing sugar and the vanilla extract and peanut butter, mixing until thick and fluffy. If it is too thick, add the additional 1 tbsp of milk. Throw in a pinch of sea salt if desired, stir and taste.

When the cake is finished, remove from the oven and let it cool completely in the fridge of freezer (about an hour) so that the frosting doesn't melt. Once it's cool to the touch, add your peanut butter cream cheese frosting in an even layer, slice into squares and enjoy!
